Crock Pot Southwest Chicken 

This is one of my new favorite recipes! I discovered it on pinterest of course at Hot Eats and Cool Reads. (I am not tech savvy so I have no idea how to link her page except to copy the link:  hoteatsandcoolreads.com ) While my picture does not look so appetizing, it is AMAZING! YUM!

Southwest chicken with rice

You will need:
3 frozen large chicken breasts (about 1.5 pounds)
1- 15.25 ounce can of corn, drained
1- 15.25 ounce can of black beans, rinsed and drained
1- 15 ounce jar of salsa
1- 8 ounce package of cream cheese

Directions:
Put the frozen chicken, corn, beans and salsa in a slow cooker. Cook on high heat for 4-5 hours. In the last 30 minutes of cooking, place the cream cheese on top of the chicken. Cover and heat until the cream cheese melts and mix in. Serve on a bed of Cilantro Lime Rice or any other kind of rice you like.
