Cilantro Lime Rice

I am not a big lime fan. BUT this rice recipe was to die for! Everyone loved it! I found this recipe on Pinterest on Hoteatsandcoolreads.com Enjoy!

Cilantro Lime Rice

What you need:

2 tablespoons of butter

2 cups of rice (jasmine, white, or any other kind you like)

1 teaspoon of sugar

1 large or 2 small limes

4 cups of chicken broth

6 tablespoons of fresh cilantro, minced

salt, to taste

 

Directions:

In a medium-sized skillet or saucepan, melt the butter over medium heat. Add rice and sugar, and sauté for a couple of minutes, then add the juice of 1/2 the large lime or one of the small limes. Stir for a minute, then add chicken broth and salt, if desired. Cover and cook for 15-20 minutes, or until broth is absorbed and rice is tender, stirring occasionally.
