Quinoa Spinach and Corn Salad
Despite all of the spices it is not too spicy. It has just enough kick to make it oh so flavorful! The even bigger plus? The cayenne, chili powder, and black pepper will give your metabolism a boost!
4 cups of cooked quinoa (I cook mine with chicken broth. 1 cup quinoa in 2 cups of chicken broth makes about 4 cups)
5 oz. baby spinach chopped
1 avocado sliced into chunks
3 corn on the cob cooked cooled and removed from the cob
1/2 pint of cherry tomatoes quartered
1 large lime juiced
2 tsp. minced garlic
2 tsp. olive oil
1/2 tsp. cayenne pepper
1/2 tsp. chili powder
1/4 tsp. black pepper
1 tsp. sea salt
Simply throw all of the ingredients in a bowl and carefully stir. It. Is. Delicious. Enjoy!
