Sweet Garlic Potato Wedges and Roasted Vegetables

Sweet Garlic Potato Wedges

Ingredients:

5 large Russet potatoes

1/4 cup of olive oil

1/2 tsp. of garlic salt

4 tbsps. of brown sugar

1/2 tsp. of soy sauce

1/2 tsp. of black pepper

Preheat your oven to 400. Wash your potatoes well. You can peel them if you want. I like the peel and they are healthy for you so I don’t. Place them in a plastic shopping bag and tie it loosely. Cook in the microwave on high for 5 to 6 minutes to soften them up. Cut the potatoes into wedges. Toss in a large bowl with all of the seasonings. Bake for 15 minutes on each side. Spicy peach chicken on a bed of garlic and herb kale

Roasted VegetablesĀ 

Ingredients:

1 red bell pepper sliced

1 orange bell pepper sliced

1 yellow bell pepper sliced

1 green bell pepper sliced

1 small white onion sliced

1 small carton of mushrooms sliced in 3’s

half a bag of baby carrots

2Ā zucchini sliced

2 yellow squash sliced

1Ā tbsp. of olive oil

garlic and herb seasoning to taste

salt to taste

soy sauce to taste

Wash your veggies and slice and dice the ones needed. Toss your veggies in the olive oil, garlic and herb seasoning, and salt. Place them in a 9X12 baking dish and drizzle with soy sauce. Bake for about 25 minutes or until the carrots areĀ tender but crisp. Make sure toĀ stir a couple of times while they are bakingĀ to ensure all of the vegetables get some of the soy sauce goodness. This is one of my favorite side dishes and I don’t even like most of these things! Something about the soy sauce and garlic and herb seasoning makes them edible and delicious! YUM!
